Pan-seared Salt & Pepper Salmon

Do you know that the scales of a few (?) fish species are used to make bio artificial cornea?  In Taiwan some scientists are conducting studies and also production of  the said bio artificial cornea.  Dr.Julio Lin and his team has developed an alternative material for corneal regeneration from a fishscale-derived collagen scaffold.  This article will give you more information - Bio artificial cornea.  One company called, Body Organ Biomedical corporation, successfully used the scales of Taiwan tilapia to develop a bio-cornea.  You can read more here - Bio cornea from Tilapia. Many will benefit from this modern medical development as millions worldwide suffer from blindness due to damaged cornea, specially that there is a shortage in human donors of corneas.  Just sharing the info and hoping that this technology will  be widely available worldwide and will be affordable to everyone in need of course.

Anyway, this week, we will be featuring some fish recipes that we've cooked for the past days.  We are starting with this pan-seared salmon cooked by the husband.  It is a very simple, very easy to make, yet very tasty salmon dish you can whip in a jiffy.  



Salmon fillet - 3 to 4 fillets
Black Pepper cracked
Salt 1/2 tsp
Olive Oil

Cooking Procedure:

1.  Wash salmon then pat dry. Prick the fish with fork or a knife.
2.  Rub both sides of the fish with salt and cracked black pepper. Marinate for at least an hour or 2.  
3.  After marinating, pour a small amount of olive oil on a pan.  Swirl to coat the whole pan.  Heat it until smoking hot.  
4.  Place the fish fillet on top of the pan, skin side down.  Now, you can add more black pepper and salt if you want. Using your spatula, press the fish down.  Sear about 3-5 minutes on each side or until both sides turn brown.

Serve and enjoy!
