Dinakdakan: Ox Tongue





I miss dinakdakan a lot.  

Dinakdakan, is an authentic Ilocano appetizer and a famous pulutan (beer/alcohol drink companion) that is made of boiled or grilled meat and is mixed with animal brain or / and mayonnaise. And since I cannot eat pork and lately, I found out that I can down a few bites of beef or ox tongue, my husband agreed to cook dinakdakan for me using ox tongue.

Eating tongue or brain for some people would require a daring palate and a sense of food adventure.  It is an acquired taste. I know of some people who are squeamish at the mere mention of cow's tongue or brain.  But we tell you,  it's nice to eat outside of your comfort zone once in a while and try some organ meat dishes like this.  However, like any other organ meat, it is only advisable to enjoy ox tongue and "brains" every now and then as they are both very high in cholesterol.  

For this creamy, meaty, and the combination of chopped ginger, chopped onions, chili flakes, and black pepper powder created a sensation bursting of pungency and spiciness, this ox tongue dinakdakan is a dish I enjoyed so much, thanks to the husband :-)

DINAKDAKAN:  OX TONGUE

Ingredients:  

Ox Tongue - 1 pc
Onions, chopped
Ginger, chopped
Black Pepper Powder
Low Sodium Salt or regular salt to taste
Freshly squeezed lemon - 1tbsp
Chili flakes - as desired
Animal brain (lamb or goat) - 1/2 cup
Real Mayonnaise  - at least 1/2 cup

Cooking Procedure:

1.  Wash the ox tongue and place it in a pressure cooker, add water enough to fully submerge the meat, and a tablespoon of salt and coarsely ground black peppercorn.  Bring to a boil.  Continue cooking under pressure for at least 20 minutes from the moment the pressure cooker starts to whistle
2. Remove tongue and cool it down.  Peel out the outer layer of the tongue and remove the rough part by scraping it. Dice the tongue into bits after.
3. Place the animal brain in container and steam it for at least 10 minutes or until it firms up. 
4. Mash the brain and mix it with the mayonnaise.
5. Mix the diced tongue and the rest of the ingredients
