Strawberry Coffee Cupcake

I am blessed with friends who not only love to eat but love to cook and bake as well.  We share the same interests in food. Well, almost, as most of them do it for a living while I do it for fun :D

What I am sharing to you today is a creation of my friend Kristine Bernardino who is now currently working as a flavorist in a Food ingredient company in the US of A.   She is a food technologist by profession and  a proud alumna of UP Los Banos (the best producer of Food Tech people? debatable, it is :D )

I've known this gal when I started in Puratos many years back.  She worked under the Research and Development department of Puratos and she was in charge of both patisserie, fruit fillings, and all the  "wet" product lines of Puratos Philippines.  In terms of professional credibility, she is highly credible and competent as she has received international trainings.  And not like the trying hard me, she approaches food the scientific way :D

After computing and converting the ingredients, since she gave the recipe to me in their true percentage form (sigh...not complaining),  here is Kristine's Strawberry Coffee Cupcake




All purpose flour - 2 cups
White Sugar - 1 c
Baking Powder - 1/2 tsp
Baking Soda - 1/2 tsp
Instant Espresso Powder - 1 tbsp
Butter, unsalted (room temperature) - 1/3 c
Whole Milk - 1c
White Vinegar - 1 tsp
Egg - 1 large
Salt - a pinch
Coffee flavor - 2 tsp

Baking Procedure:

1. Pre-heat oven to 350 degrees Fahrenheit 
2. Mix together the all purpose flour, baking powder, baking soda, salt, and instant espresso powder.
3.  Combine the whole milk and vinegar, set aside
4.  Cream butter and sugar until fluffy
5.  Gradually and alternately add the egg, dry ingredients, coffee flavor, and the milk.  Mix until well incorporated
6.  Scoop batter to greased / lined cupcake molds
7.  Bake for 20-25 minutes  at 350 degrees Fahrenheit 

Now, for the frosting she used to decorate the cupcake,see the recipe below:



Butter, unsalted (room temperature) - 1/4 cup
Cream cheese (Chilled) - 1/2 cup
Heavy Cream - 1/4 cup
Sugar - 1/4 cup or to taste
Strawberries, pureed - 1/2 cup
Strawberry flavor - 1 tsp

Mixing Procedure:

1.  Cut the cream cheese into cubes.
2.  Using the paddle attachment, cream butter (softened, cream cheese,  sugar, pureed strawberries, and strawberry flavor.  Do not over cream so the frosting will  not become too soft and flat.
3.  Once smooth, change attachment to the wire whisk, pour the cream and whip until soft peak.

Pipe on baked coffee cupcakes and enjoy
