Sautéed Tomatoes & Onions

Our breakfast at home:  Fried smoked fish served with sauteed tomatoes & onions

I shared before that in our family, eggs, may it be salted, soft-boiled, hard-boiled, scrambled, cooked as sunny-side-up or omelet,  are always breakfast food.  Well, actually, that's how our Mama raised us.  

If she is not serving eggs with fried meats for breakfast, she makes us fried fishes or fried dried fishes like tinapa  (smoked fish), tuyo, danggit, and etc.  And instead of just dicing tomatoes and onions to go along with those sumptuous fried dried fishes she always serves them with this - sautéed tomatoes & onions

This side dish is something you can try that is great with any fried fishes.  





SAUTEED TOMATOES & ONIONS

Ingredients:

Ripe Tomatoes, diced - 3 large
Onions, diced - 1 large
Salt to taste
Black Pepper Powder - 1/4 tsp
Vegetable oil - 2 tbsp

Cooking Procedure :

1. Heat oil in a pan then sauté the onions then the ripe tomatoes.
2.  Season with salt and black pepper powder. Simmer until the tomatoes softened and wilted
