Stir Fried Ampalaya & Bistek

One of the things I always do in the kitchen is "recycling" leftovers :-) The truth is I really don't want to eat the same dish more than twice.  And I cannot stand leftovers sitting inside our refrigerator for more than 3 days.  So, most of the time, I cook just enough for the two of us.  There are times, however, when the quantity I cook is more than we can eat in one meal so I stock them in the refrigerator.

I cooked bistek Tagalog (beef stake Tagalog style, see recipe here) a few days back and since I cannot eat beef and my husband cannot consume all of it, my bistek went straight to the refrigerator and then I forgot to serve it to him the next day so it got stuck there.  I cannot bear the thought of putting my bistek to waste so I decided to give life to it in this stir fried ampalaya and bistek.


Ingredients :

Ampalaya (bittergourd), sliced thinly
Bistek leftover - whatever is left
Garlic, chopped - 3 cloves
Onions, diced - 1 small
Salt and Black Pepper Powder to taste
Vegetable oil for frying

Cooking Procedure :

1. Drain and dice the beef.
2. Place the vegetable oil and garlic in a frying pan and heat them under medium fire.
3. Add the onions and the beef.  Stir for a minute until the onions soften.
4. Throw in the ampalaya and sprinkle with salt and black pepper.  Stir fry until the ampalaya are cooked (about 5 minutes)
