Oven Grilled Smoked Tuna




The Christmas and New Year holidays are over.  So, binging over food and excessive alcohol drinking need to cease right now.  Otherwise, you need to redo your new years resolution to include a change of wardrobe from size "S" to "L" or worse "xxL.

If you need to "lie low" on your high calorie food intake which you did not do over the festive season, here's a wonderful fish dish to start a healthy eating habit for this new year 2014.

This oven grilled smoked tuna is my husband's creation.  Try it :-)

     OVEN GRILLED SMOKED TUNA

Ingredients :

Tuna - 1 whole
Liquid Smoke - to taste
Knor Seasoning - 2 tsp
Soy Sauce- 2 tbsp
Black Pepper Powder
Garlic Powder

Cooking Procedure :

1.  Mix all the ingredients and place in an infuser.  Inject the fish with the sauce.
2.  Rub the external and internal part of the fish with the remaining sauce.  Let sit for at least 2 hours.
3.  Using the grill function of your oven, heat oven to 200 degrees Celsius.  Rub the skin of the fish with black pepper powder
4.  Use a baking dish with a grilling rack.  Place the fish on the rack then cover with an aluminum foil.  Grill for about 20 minutes.
5.  Remove aluminum foil.  Increase the oven temperature to 250 degrees Grill the fish further for at least 5-10 minutes on each side or until the skin gets charred.  

Do not prolong the grilling as it will toughen the meat of the fish.

Serve with your favorite vinegar dipping sauce.  Here's a vinegar dipping sauce suggestion:

     CUCUMBER-VINEGAR DIP

Balsamic Vinegar - 2 tbsp
White Vinegar - 2 tbsp
Salt - 1/8 tsp
Brown Sugar - 1 tsp
Onion, chopped - 1 small
Garlic, crushed and chopped - 2 cloves
Cucumber, chopped - 1 small
Black pepper Powder

Mix all the ingredients and serve with any grilled dishes
