Stir Fried Salt & Pepper Squid

It's been more than a week since we got back in Qatar after almost a month of vacation in the Philippines.  It was a tiring vacation since we've been busy doing so many things yet we weren't able to finish everything on our to-do-list including visiting our beloved grandmother.  Last Tuesday, I received the saddest news ever for this year, Lola Ing (that's how my sisters and I fondly called our grandmother who is the sister of our Mama's mother) succumbed to old age. She was 91. I regret the fact that I wasn't able to see her when we were in Tabuk.  I regret that I wasn't able to say thank you for the love she showered us and for every kindness she showed us.  I will forever be grateful for having her in our lives.  To our Lola Ing, thank you and I love you. My siblings and I will surely be missing her.

Anyway, this squid recipe has been long over due for posting and since I am searching the internet for hospitals in Qatar (aside from Hammad and Al Ahli hospitals) that has a gastroenterology medical services (I need to consult a specialist for a second opinion about my gut), I decided to post my squid recipe I cooked several months ago (last April, imagine that?) - Stir fried Salt & Pepper Squid

My husband and I got the first taste of this stir fried salt & pepper squid when we dined in at Shanghai Garden, a Chinese restaurant located at the floor of City Center (Doha, Qatar).  The restaurant offers buffet of Chinese food and drinks and cost only about QR 59 per person during supper time.

This is great as an appetizer or a main dish with steamed plain white rice.  It is also wonderful as pulutan



Squid rings - 100 g.
Bell pepper, cut into square - 1 small
Garlic, chopped - 10 cloves
Onions, cut into square - 1 large
Red hot chilli, chopped - as desired
Magi Magic Sarap - 1/2 tsp
Salt - 1/4 tsp-
Black Pepper Powder - 1/2 tsp
Sweet Paprika powder - 1/2 tsp
Cooking Oil - 1 cup +


Egg - 1 small

Salt - 1/2 tsp
Black Pepper Powder - 1/2 tsp
Sweet Paprika powder - 1/2 tsp
Corn Starch - 3 to 4 tbsp

Cooking Procedure:

1.  Wash and dry the squid rings. Set aside.
2.  Mix the ingredients for the breading together except for the egg. 
3.  Heat the oil in a frying pan.
4. Break egg, pour it on, and mix with the squid.  
5.  Dredge the squid with the dry breading mixture and mix well.
6. Fry the breaded squid rings under medium fire until the breading turns brown on both side.  Do not overcook the squid.  Scoop out the squid and place it on paper towels to remove excess oil
7.  In the same frying pan,  on medium fire, heat a tablespoon of oil from the oil used to fry the squid.  Sauté the garlic and chilli peppers in it until the garlic turns almost brown. 

8. Reduce fire to low.  Stir in the bell pepper, onions, salt, sweet paprika, magi magic sarap, and black pepper. Stir until the bell pepper softened.  

9.  Mix the fried squid with the bell pepper & onion mixture, toss well.  Remove from fire.
