Turkey Bacon & Squid Pasta

It's been 4 months since my last post.  That's a long time to hibernate. Oh well, that's life.  So after an operation, several hospitalizations, and numerous doctor visitations, I'm back, alive, kicking, and blogging again.

Despite the fact that I lost the credibility of my palate for sometime may be because of the medicines I took and the fact that I had to reduce the use of oil and salt in our food, not to mention that I  also lost my appetite, I haven't stopped cooking.  My husband and I need to eat you know :-) Oh, my husband did most of the cooking during my recovery periods and I thank him for that and for taking good care of me of course :-)

Once in a while we host a small dinner with friends.  I'm grateful that they eat the dishes I serve them without any complaints :-).  Here is one of those dishes I have cooked and served for them.  Pasta, you may know is one of the dishes I love to cook because it is easy to prepare and you cannot go wrong with it.  Try this at home :-)

Red Wine goes well with Pasta dishes


Spaghetti - 200 g Parmesan cheese, grated Turkey bacon - 6 slices or as desired
Squid rings - 100 g.

  Ripe Tomatoes, diced - 4 large Tomato paste - 50 g Bell pepper, chopped - 1 small
Olives, sliced - 2 tbsp Onions, chopped - 2 medium Garlic, chopped - 5 cloves Basil, dried and ground Thyme, dried and ground Marjoram, dried and ground Rosemary, dried and ground Sweet Chili Sauce - 2 tbsp Ground black pepper Sugar - less than 1 tbsp Salt to taste Sunflower oil (or any vegetable oil available) Water - 1 c

Cooking Procedure:

1.  Cook the spaghetti until aldente as directed in its package.  Drain and set aside 2.  Pan-grill the turkey bacon until it turned brown then cut into strips.  Set Aside
3.  Heat oil in a pan. Fry the squid until it changes in color.  Remove squid from pan and set aside.
4.  Stir in the garlic and cook until it turned almost brown.
5.  Stir in the tomatoes and onions and simmer for a minute.  
6. Add the rest of the ingredients and simmer until the tomatoes are fully mashed and the sauce thickened.
7. Add in the squids, olives and bell-pepper.  Adjust taste as needed. Simmer for another 5 minutes
7.  Toss in the spaghetti noodles and the turkey bacon.  Mix well.
Transfer the spaghetti mixture into a serving plate and top it with grated parmesan cheese before serving
