Korean Ginger Chicken





This week we are featuring dishes from the Land of the Morning Calm - Korea.  My concept of Korean food is kimchi, barbecue, and hot fiery dishes like my husband's favorite Korean barbecue, bulgogi.  Like any other Asian Cuisine, Korean food is very much rooted in their tradition thus each dish evokes a rich culture.  That is why I find Korean food  intriguing.

I am not quite familiar with Korean food and exploring it would be exciting.  I am starting with this very simple and very healthy Chicken dish.  It's sweet with a special touch of ginger flavor.



You can eat it with steamed rice of your choice and with thinly sliced lettuce leaves on the side.  But I suggest that you wrap the chicken with a whole lettuce leaves.



     KOREAN GINGER CHICKEN 

Ingredients :

Chicken breast, thinly sliced - 300 g
Ginger, grated - 2 tsp
Garlic, minced - 3 cloves
Soy sauce - 1 1/2 tbsp
Honey - 1 tbsp

Cooking Procedure :

1. Combine mirin, soy sauce, ginger and garlic in a bowl. 
2.  Marinade chicken strips in the sauce for at least 15 minutes.
3.  Pan-grill chicken on medium fire until it turned almost brown to your liking.  I grilled mine for less than a minute each sides.

Serve with rice with thinly sliced lettuce leaves or you can serve the chicken wrapped in lettuce leaves.  don't forget to drizzle it with the sauce.

     SAUCE for the KOREAN GINGER CHICKEN :

In the same pan where you grilled the chicken strips, simmer the remaining marinade for at least a minute.

Serve it with the chicken
