Cheesy Chicken Lumpia

Watching the news on the election canvasing in the Philippines and knowing who is making to the top 12 senatoriables made me anxious and grumpy.  I was really upset knowing that  Nancy Binay and Cynthia villar are making it to the top 12 while Dick Gordon and Risa Hontiveros are struggling below them.  There, my vanilla and strawberry cupcakes are flops (gggrrr)  Watching the news on the election canvassing while baking is never a good idea :-(

How can anyone vote for Nancy Binay and Cynthia villar?!?!?!?!  Most Filipinos never learned.  Elections in the Philippines were never  about credibility, wit, and ability of the candidates.  It has always been a popularity contest.  Most of our kababayans often cast their ballots based on name recall / name recognition.  Our unintelligent population have been electing incompetent candidates to official positions.  This is one proof that the level of illiteracy in the Philippines is sky-high.  Are we talking of what - 70 to 90% of the voting population are illiterate?  We really need to allocate more budget to education.  But how can the Philippines do that when Filipinos have been putting movie stars and their sons & daughters, personal assistants, nincompoops, inexperienced people,  people of questionable backgrounds and integrity,  to run the government?  We cannot expect these people to past bills / laws that will better the country.  How can they when they couldn't even make a stand on important issues concerning the country and its people.   Haaay, Juan dela Cruz has to endure  more years of tribulation.

For the love of me (inhale..... exhale.....repeat)  Let's just eat to that.  I'm serving cheesy chicken lumpia to bring down the heat due to frustration and disappointment.  


Ingredients :

Chicken, minced - 250 g
Mozzarella, sliced into strips
Cheddar Cheese, grated - 50 g

Onion, minced - 1 medium
Garlic, minced - 8 cloves
Bell Pepper, minced - 1 small
Carrots, minced- 1 small
Iodized Salt - 1/4 tsp or to taste
Black Pepper Powder 
Magi Magic Sarap - 
Egg, beaten - 1
Oil for frying
Lumpia / Spring Roll Wrapper

Cooking Procedure :

1. In a non-stick pan place the minced chicken and sear for a few minutes until it turns almost brown.  Remove from fire and cool down.
2. Mix all the ingredients well in a bowl, except for the mozzarella cheese and lumpia wrapper
3.  Layout the lumpia wrapper and place two strips of mozzarella cheese in one edge of the wrapper.  Using a spoon, place a spoonful of the chicken mixture on top of the mozzarella cheese then top it again with mozzarella strips.  Wrap then roll.  Repeat until all the chicken mixture had been wrapped and rolled.
4.  Heat oil in a frying pan (the level of oil should be able to submerge at least half of the height of the lumpia.  The oil should also not be smoking hot.
5.  Fry the lumpia, flipping it from one side to another, until the wrapper turned brown and crunchy.  
6. Place the fried lumpia on a strainer or on top of napkins to drain the excess oils in it.
