Shrimp, Squash, and Long Beans in Coconut Milk

We're done featuring Chinese cuisines last week.  We have posted just a few Chinese recipes featuring beef, chicken,  and pork as main ingredients. We will feature more Chinese recipes before the year ends so stay tuned.

This week, we will be posting Filipino vegetable dishes which I and my husband cooked.  Some recipes are suitable for strict vegans, others for lacto-ovo vegetarians, some for pesco-vegetarian, and also for the flexitarians.  We will start with this delicious ginataan recipe -  Shrimp, squash, and long beans in coconut milk

This is a Filipino dish which is a combination of long beans and squash simmered in rich coconut milk.  What makes this dish extra delicious is the addition of shrimps, sometimes pork. Suitable for the flaxitarians and pesco-vegetarians.


Ingredients :

Shrimps - 100 g
Squash - 200 g
Long beans (string beans)
Ginger - 3 slices
Garlic, chopped - 6 cloves
Onions, diced - 1 medium
Ripe Tomatoes, diced - 2 medium
Coconut Powder Mix (Knorr brand) - 1 c
Water - 2 cups
Fish Sauce - 1 tbsp
Low Sodium Salt - to taste
Vegetable oil

Cooking Procedure :

1. Heat oil in a wok / pan.  Saute in it the garlic, then the onions and ginger, then the tomatoes.  Stir for a minute until the tomatoes soften
2.  Stir in the shrimp and let simmer for another 2 minutes.
3.  Add the squash.  Mix the water and the coconut powder mix and pour it on the squash.  Bring to a boil and continue to simmer for 5 minutes.
4.  Season with the fish sauce and salt.  Add the long beans and continue to cook until the long beans are softened.
