One of my favorite meat soup serve by those food hawkers in Singapore is the ABC soup. ABC soup is a Chinese pork rib soup which is call “luo song tang”. That's the dish I had in mind when I was cooking this lauya nga luppo ti baka ken nateng (Beef Trotters & Vegetable Soup) . How I miss that flavorful soup.
There is really nothing special in the ingredients used in this soup nor in the method of cooking. What I actually did is to cook it the old way - that is to slow-cook the meat for several hours without using a pressure cooker or special cooker. Since this is just a plainly boiled meat trotter, the best way to give the dish its needed flavor is to slow-cook the meat as it brings out the full beefy flavor of the meat. And it really did. I don't need to use bouillons to add that needed beef flavor.

LAUYA NGA LUPPO TI BAKA KEN NATENG
Beef trotters - 500 g.
Garlic - 15 cloves
Onions, diced - 1 large
Carrots, diced - 1 medium
Potatoes, quartered - 2 medium
Salt to taste
Water enough to cook the meat for at least 3 hours
Cooking Procedure :
1. Dump all of the ingredients, except for the vegetables, in a pot and bring to a boil at low-medium fire for at least 3 hours. Add more water as needed. Adjust taste by adding more salt when necessary.
2. Add the potatoes and cook for another 10 minutes or until the potatoes are soft.
3. Add the carrots and cabbage and cook it until the cabbage is soft.
Serve and enjoy
