Baked Whole Tilapia with Mozzarella Cheese

Hi people.  I'm back.  I've been through a rough week but I'm here, alive, healthier, and kicking harder :-).  I was rushed to the hospital (Al-Ahli Hospital) 5 or 6 days ago due to diarrhea but was diagnosed not only with bacterial infection in my intestines but also of severe anemia with my hemoglobin level at 6.4 g.  The doctor wanted me to me have a blood transfusion right there and then but I refused to, because I was afraid of the risk of, you know, transferrable diseases through blood.  My husband talked me through it though and he was able to convinced me to get a second opinion and so we went to Hamad General Hospital.  When I learned that my hemoglobin level had been dropping from 6.4 to 6.2 to 5.5 g., I agreed for a blood transfussion.  So there, I was given a hefty amount of blood (3 units).  Now, my hemoglobin level had stabilized and my last CBC result showed it at 12.2 which is already at a normal level.  Thank you will never enough to show how much gratitude and appreciation I and my husband have for the un-named blood donors and to the doctors, nurses, and staffs of Hamad and to the good doctor at Al-Ahli.  And I am also grateful to my diarrhea, cause had I not suffered from it, my condition couldn't have been found out since my anemia was asymptomatic.  Thank God for everything :-)

Anyway, while fighting boredom in the hospital, I played with my phone :-) I was checking on how my blogger works with my galaxy note II when I accidentally deleted my post for this recipe.  Good thing I often jot down my recipes on my red book so here I am re-posting the recipes again.



Tilapia - 1 whole Mozarella cheese - you can use grated or sliced whichever is available
Onions, sliced into rings - 1 large Ginger, crushed and minced - 1/2"
parsely, dried & ground
Black Pepper Powder
Salt Vegetable oil -  1tsp

Cooking Procedure:

1.  Make pocket or pouch by slicing the belly through and through its backbone cutting through the bones at the center.  Or better yet,  slice the fish from its backbone through its belly to make a perfect pouch.
2. Pre-heat oven to 200OC

3. Grease the aluminum foil with a tsp of vegetable oil
4.  Rub the skin and cavities of the fish with salt, black pepper, and parsely then lay it out on the aluminum foil. 

5.  Stuff the cavity with the onions, ginger, and mozzarella cheese.  
6.  Wrap the aluminum foil around the fish then place it on a baking pan/dish.
7.  Bake the fish at 200OC  for at least 20 to 30  minutes.  If there is no blood oozing from the fish, then it is cooked

I also baked some eggplants to go with this baked tilapia.  A delicious dip would also be great.  I made one that is perfect for this recipe. 


Real Mayonnaise - 3 tbsp
Garlic Powder - 1 tsp
Black Pepper powder - 1/2 tsp
White Vinegar - 2 tsp

Mix all the ingredients together and serve with the BAKED WHOLE TILAPIA WITH MOZZARELLA CHEESE
