Grilled Salmon with Kiwi-Apple Relish

Salmon is my husband and I's favorite fish.  It is one of those things we always have on stock.  

Salmon is a fatty yet nutritiously delicious fish.  And like anyone who loves to cook and eat, we have our own preferences when it comes to preparing, cooking, and eating salmon.  Since it is a fatty fish, we want to cook it in a certain way that it won't cloy the palate.  Frederick wants salmon either raw or cooked rare or undercooked, he doesn't like it well done, cooked prolongedly, neither over-cooked because it becomes dry and unappetizing.

Sometimes, when I grill salmon to his liking - tender, somewhat silky, moist, and undercooked, the fattiness of the salmon is off-putting not only to him but also to me. That's why I tried experimenting on side-dishes, some fruity or savory condiment that can go with it.   Kiwi-apple relish is one.




Salmon fillet
Salt and pepper
Sunflower oil


Kiwi Fruit, diced - 2 fruits
Apple, diced - 1 fruit
Green Bell Pepper, chopped
Orange juice, freshly squeezed - 1/4 c
Black Pepper, freshly ground
Salt to taste

Cooking Procedure:

Grilled Salmon
1.  Rub the salmon fillet with salt and pepper and let sit for at least 30 minutes
2.  Brush pan with oil and heat it at low fire.
3.  Brush salmon fillet with oil.  Drizzle it with the herbs and more pepper as desired.
5.  Pan grill salmon at less than 1 minute each on both sidesThe length of time you pan grill a salmon fillet depends on how cooked you want your salmon fillet to be

Kiwi-apple relish
1. Mix all the ingredients well and put it in the refrigerator to chill for at least an hour before serving
