Pan-Grilled Hickory Saba Mackerel











These few days are dedicated to the fish dishes which we cooked at home, some by fellow Tabukenios, and some by my husband and I which we cooked way back when we were still in Singapore.  Also, some were part of the spread we dished out during our second bout of get-together last Undas where Mammy and I  prepared a no-red-meat menu (see the recipes of the dishes we prepared for the get-together: Creamy Cheesy Tuna & Mushroom Pasta, Sweet and Sour Imelda , and Steamed Tilapia with Ginger)


Today, I'm featuring the recipe of my husband's pan-grilled fish.  Saba mackerel is one of my husband's favorite fish next to salmon.  We usually stock a few packs of this way back when we were still in Singapore.  Do you know that it is cheaper to buy frozen saba mackerel at Giant supermarket?  Yes it is cheaper there as compared to those frozen saba mackerel you can get from NTUC (fairprice), cold storage, carrefour, nor at shop & save.  That's the reason why we always storm the giant at vivo city because of their saba mackerel and other variety of fishes.

One of the recipes that Frederick usually cooks is pan-grilling (grilling over charcoal inside the flat is not allowed in HDBs)  And  one of the favorite ingredients of my husband when he grills is this "Hickory Liquid Smoke Seasoning" we went on supermarket hunting all over Singapore in search of this and we were able to buy this at cold storage located at Anchor Point Mall along Alexandra Road.  




Oh since I mentioned Anchor Point Mall,  the mall houses factory outlet stores for premium brands such us:  Billabong Outlet, Charles & Keith Outlet, Cotton On and Cotton On Kids Outlet, FOX Outlet, G2000 Outlet, Giordano Outlet, Little Once Outlet and Pedro Outlet.  And speaking of factory outlet stores, visit Changi Point mall.  You can find FOS for adidas, nike, lacoste, G2000, and other branded clothings and shoes their :-)

Here's my husband's recipe: 


     GRILLED HICKORY SMOKED SALMON
Ingredients:

Saba mackerel sliced into half – 4 pcs


Marinade:
 
Hickory Liquid Smoke Seasoning - 1 tsp

Kikkoman Soy Sauce - 2tsp
 
Garlic Powder - 1 tsp
Ground pepper (black, white, red)
Olive Oil - 1 tsp


Cooking Procedure


1. Mix all of the ingredients for the marinade and marinate the fish in the sauce for at least an hour
2. Brush griller with oil and heat it under medium fire.
3. Brush the saba mackerel with olive oil and grill them until each side turned brown.  Bast the fish with the marinade while grilling
