Poki Poki (Scrambled Egg and Eggplant)

One of the vegetables I love to eat since I was a child are eggplants.  I like them fried and grilled specially when mixed with eggs.  My mother often cooks eggplants with eggs and she has different eggplant + egg recipes.

That's why we decided to feature eggplants as the  main ingredients for the recipes or entries to be posted this next few days.  You can also click this for the list of other "eggplant" recipes posted earlier.  We have tortang talong, ensaladang talong, etc.

Since we are Ilocanos, we are starting with this popular eggplant + egg dish, scrambled egg and grilled eggplant known as Poki poki.  Ok, for the green minded people who knows Tagalog, we know what you are thinking. But we Ilocanos use a different term when we refer to that "women's private thing".  But don't ask me what it is coz I'm not saying it AND don't ask me why this dish is called poki poki as I have no idea, neither does my husband.

This is ovo-vegetarian friendly people.



Eggplant - 1 large or 2 medium
Eggs, beaten - 2 large
Ripe tomatoes, diced - 1 large
Onions, sliced into rings - 2 medium
Garlic, minced - 3 cloves
Canola oil - 2 tsp
Salt & ground pepper to taste

Cooking Procedure:

1. Grill Eggplants and peel them.  You can grill the eggplants using charcoals or just stove-grill them as we usually do.  Chop the grilled eggplants
2. In a sauce pan, place the oil and garlic then Sauté it under medium fire until it is aromatic.  Add the onions, then the ripe tomatoes, and let simmer until the tomatoes becomes mushy.  
3. Add the  eggplants and continue to stir. Season with salt and ground pepper
4.  Pour the beaten egg and stir until the egg seems to set.

Serve with sinangag (see recipe -Sinangag (Garlic Fried Rice) ) and fried fish.
