Ensaladang Talong, Kamatis at Padas (Grilled Eggplant -Tomato-Padas Salad)

One of Filipino unique contribution to the world of salad is similar to this salad that we are posting.  A mixture of fruits, veggies, and Filipino’s all time favorite, the bagoong .  For the bagoong, choices of alamang, plain bagoong, bagoong munamon, or bagoong padas, etc, can be mixed depending on individual preference and availability of the bagoong.

Here’s another enselada recipe:



Eggplant, whole - 2 medium size in length
Ripe tomatoes, diced - 2 large
Onions, diced - 1 large

Calamansi - 3 small ones
Bagoong na Padas

Cooking Procedure:

1. Grill the eggplant, remove the charred skin and dice it.
2. Mix the eggplant with the tomatoes and onions
3.  Mix the ingredients of the sauce.  Drizzle it over the mixed eggplant, tomatoes, and onions.
