Scrambled Egg with Bittergourd







I cooked scrambled eggs with bittergourd for my supper tonight and for my pack lunch tomorrow. This is a favorite anytime dish specially when I was still living in Manila with my sisters.  My Mama Tessie usually serves this during breakfast.  My mother follows a certain “tradition” when it comes to what dish is for breakfast, lunch and supper.  And anything with fried eggs will fall under the breakfast category.

I admit that my style of cooking this dish is usually not acceptable for others as I want it to be naturally bitter.  My husband prefers it to be less bitter so most of the time he ends up cooking it.  Unless he wants a bitter tasting dish for dinner, I will gladly cook one for him :-)

Minced pork can be added for variation but if you opt for healthy cooking, better stick with this recipe

     SCRAMBLED EGG WITH BITTERGOURD
Ingredients:

Eggs, beaten - 3 whole
Bitter gourd (ampalaya) sliced thinly - around 150 to 200 g.
Onion, diced - 1 medium
Garlic, coarsely chopped - 3 large cloves
Ripe Tomato, diced - 1 medium
Vegetable oil - 2 tsp
Ground white pepper - dash
Fish sauce - 2 tsp


Cooking Procdedure:

  1. First you can do this or you can proceed straight to number 2.  Rub salt on the bitter gourd (ampalaya), add a bit of water and let it soak in it for 10 minutes.  Wash the ampalaya thoroughly to remove the traces of salt.  Drain and set aside.

Doing this will reduce the bitter taste of the bitter gourd.  But most of the time, I just cook it as is without rubbing and soaking the bitter gourd in salt.  It's not ampalaya if it's not bitter, isn't it?

  1. Beat the eggs in a bowl.
  2. Heat  oil in a frying pan.  Sauté the garlic then the onion, then the tomatoes.  When the tomatoes start to wilt add the bitter gourd and stir.  Sprinkle with a dash of ground white pepper and fish sauce.  Cook the bitter gourd for 5 minutes
  3. Pour the beaten egg on the bitter gourd mixture and cook until the eggs are set.

Serve with rice.  I usually eat it as is J
