Chicken Macaroni Salad

This is one of those long-overdue recipes that I have supposedly posted days earlier but due to unknown reasons I wasn't able to :-)

This chicken macaroni salad is Airene's (Sarmiento) recipe.  They brought this to our camping two Saturdays ago.  It is a perfect side dish to our char grilled chicken and tilapia which we cooked during the camping.  The recipe is below.

I am on a special diet now.  You know, I need to loss weight again coz I want to get pregnant, and since this is a less than 450 calorie complete meal, I plan to make part of my weekly meal plan.  This will make for a great dinner with a cup of warm green tea.   I am actually planning of making my version of this chicken-macaroni salad within the week or next week, not sure but I will.  I'll make it a bit healthier by using low-fat mayonnaise. If there's a wholewheat elbow macaroni I can grab, I'll use that :-) I need to start hunting for whole wheat noodles, I guess.



Elbow Macaroni – 500 g.
Chicken breast – 300 g.
Pineapple slices, diced – 2 cans (net wt. 567 g. each can)
Carrots, cubed (1/4 ” x 1/4 ”x 1/4 ”) – 1 medium
Cheddar Cheese, grated – 200 g.
Mayonnaise – 10 tbsp
Sugar – 2 to 3 tbsp
Ground white pepper – ½ tsp
Salt - 2 tsp or to taste

Cooking Procedure:

1.    Boil Chicken breast until it’s cooked.  Drain and set aside broth.  Shred cooked chicken and set aside.
2.    Cook elbow macaroni using the chicken broth.  Follow direction in its package.
3.    Mix all the ingredients.  Chill for an hour before serving

Enjoy with a delicious freshly squeezed OJ but I'd prefer to have and ice cold coke zero with this
