Last Monday, I bought a pack of frozen oysters without its shells (about 300 g.) at NTUC for SG$3.95, and a bundle each of sweet potato leaves and spring onion leaves  at less than a dollar each.  When I got home, I left them all to my husband Frederick for him to do his thing with them.  

And so he whipped a stir-fried oyster with the sweet potato in it.  The oyster is not bad.  It was decent and not fishy nor slimy.  It almost tasted like green mussels but juicier and more delicious. 

Here’s my husband’s simple recipe of   STIR FRIED OYSTER WITH SWEET POTATO LEAVES


Ingredients:

Frozen Oysters (de-shelled) – 300 g.
Garlic, chopped – 5 cloves
Onions, diced – 1 medium
Fish Sauce
Chili sauce
Sweet potato leaves – 1 bundle
Spring onion leaves – ½ of a bundle
Water

Cooking Procedure:

1. Heat oil in a saucepan.  Sauté in it the garlic then the onion.  
2.  Add in the oysters, stir for a minute then add the rest of the ingredients except of the sweet potato leaves.  Bring to a simmer then add the sweet potato leaves.
3.  Cover and cook the dish until the sweet potato leaves are wilted but still green.

Dish out and enjoy.
