Grilled Herbed Salmon Pasta





I did promised my husband that I'd be cooking more pasta dishes this year :-)

So here's another simple yet delicious pasta.  Frederick though do not like the taste and texture of the whole wheat spaghetti noodles BUT I will still be using it next time.  Whole wheat pasta has low GI as compared to their white counter part.  It's a healthier choice for a couple like us who wants to shed some pounds and shed our waistlines (sorry Dear hehehe)

GRILLED HERBED SALMON PASTA

Ingredients:

Salmon fillet – 300 g. (cut in 2 slices)

Basil, dried and ground - dash

Rosemary, dried and ground – dash
Paresely, dried and ground - dash
Ground white pepper
Freshly ground mixed peppercorns
Extra virgin Olive Oil – 2 tsp
Salt

Pasta:

Whole wheat Spaghettie noodles – 50 g.
Garlic, minced – 2 large cloves
Red Onion, chopped – 1 medium
Extra virgin Olive Oil – 3 tbsp
Lemon Juice – 2 tbsp
Sugar – ½ tsp
Salt - dash

Basil, dried and ground - dash

Rosemary, dried and ground – dash
Paresely, dried and ground - dash
Ground white pepper
Freshly ground mixed peppercorns

Cooking Procedure:

1.  Pat dry salmon fillets and rub with salt and the rest of the spices and herbs.
2.  Heat 1 tsp of extra virgin olive oil on a pan griller. 
3.  Place the salmon on the pan and drizzle it with the remaining olive oil
4. Grill salmon for 1 minute on its sides (medium rare) or longer as you prefer.  Place on a plate and set aside.
5.  On the same pan, heat 1 tbsp of oil and sauté in it the garlic, then the onion, and then the pasta. Mix with it the herbs and spices.  Continue to simmer under low fire.
6.  On a medium bowl,  combine the lemon and the remaining olive oil, salt and sugar.  Pour it on the pasta mixture and continue to simmer for a minute then remove completely from the fire.

Divide the pasta into 2 plates then top the pasta with the grilled salmon. Squeeze lime juice on the grilled salmon for added flavour.  Serve with buttered mixed veggie and enjoy J
