Steamed Wrapped Milk Fish with Tartar Sauce


Christmas eve is fast approaching.  We have only 3 days more to decide what to cook for Noche Buena and we haven't made up our minds :-(  I'll make this post quick as we are bound to Fairprice at NEX to buy some groceries and stuff to cook.  We'll know what to cook when we get their perhaps :-) Buy the way, I'm on MIA :-) I called in sick this morning.

Ingredients:

Milk fish fillet (6 small pcs) – 1 large or 2 medium size
Cabbage leaves, large - 6 to 12 pcs
Onion, minced – 1 large
Ginger, minced – ½ inch
Sugar – 1 tsp
Salt and ground pepper to taste

Tartar sauceYou can use ready-made tartar sauces or you can try our home-made tartar sauces.  See the recipes here and here 



Cooking Procedure:

1. Blanch cabbage leaves to make it pliable.  Make sure that you do not boil it.  Pat dry and set aside
2. In a bowl, mix the onion, ginger, sugar, salt and ground pepper.
3. Layout the cabbage leaf/leaves, place a fillet of milk fish on top of it, spread a small amount  of the onion-ginger mixture on top of the fish, then wrap it and secure with a toothpick.  
4. in a double boiler, boil water.  Arrange the wrapped fish fillets on the top of the steaming plate.  Steam for 15-20 minutes

Drizzle with the tartar sauce before serving
