Salted Cracker Prawn


Two Mondays ago, I had dinner with my colleagues at Yum Cha (located at Serangoon Garden Country Club).  Yum Cha is a Chinese restaurant that serves authentic Chinese dishes.  They have this "salted-egg prawn" that had intrigued my palate that I promised to myself and my husband that I'd be cook the same or something similar to it.  My Colleagues said that the "salted-egg prawn" at yum cha is not actually or may be it was not the usual "salted-egg prawn" that they are used to.  I was also told that it was also not the same as the famous Singapore cereal prawn.  Nonetheless, "salted-egg prawn" or "cereal prawn" or not I tried cooking my own version and Frederick loves it :-)

I used egg to coat and of course salt but I don't want to use the name "salted-egg prawn" and I also don't want to call it "cereal prawn" since I used cracker crumbs.  I was asking my colleague, May (Khin Omar Tun) as to the kind of cereals used in the cereal prawn but she also has no idea.  She was helpful though.  She sent me a video instead on how to cook cereal prawn but it was in Chinese :-(. How am I suppose to understand it?   Despite that, I was able to make out a few useful information specially on how the cereal prawn is cooked which gave me an idea for my recipe.

So here's our salted-cracker prawn that my husband devoured with gusto.  by the way, I cooked this last  Saturday so dieting is out of the way since  Saturdays and Sundays is always our feast day ;-)

     SALTED CRACKER PRAWN


Ingredients:

Prawn – 12 pcs
Egg, beaten – 1 medium
Potato starch – 3 tbps
Garlic, minced – 10 large cloves
Red, hot Chilli pepper, chopped – 2 pcs (as desired)
Crackers, coarsely pounded – 2 pcs.
Salt – 2 tsp
Ground black pepper
Vegetable oil for frying

Cornstarch or any available cooking starch can also be used in replacement of the potato starch.  For the crackers, you can use any plain crackers like marie biscuit, sky flakes, graham crackers, etc.  Just pound the crackers to get  coarse crumbs not fine ones.

Cooking Procedure:

1.  Clean and devein shrimps.  Do not remove heads & shells.  Pat dry.
2.  Pour beaten egg on it then add the potato starch.  Mix well.



3.  Heat vegetable oil in a frying pan.  Fry shrimps until they are crispy.  Drain excess oil from the fried shrimps on a paper towel



4.  In the same frying pan on medium fire, heat a tablespoon of oil from the oil used to fry the shrimp.  Sauté the garlic and chilli peppers in it until the garlic turns almost brown. 
5. Add the cracker crumbs, salt and pepper. Stir until the mixture is toasted.  Remove from fire.
6.  Mix the fried shrimps with the garlic-salt-cracker, toss. 

Dish out in a platter and serve with roasted pork and adobong kangkong :-)
