Pork Sisig with Pig’s Brain

There are long lists of ingredients to choose from and diverse ways to cook sisig- specially pork sisig.   If you have noticed, this is the fourth recipe for pork sisig in our blog :-)   that’s how much we love pork sisig.  This sisig version of ours includes pig’s brain which is not present in the other three recipes we had already posted.  With this recipe, adding mayonnaise is no longer needed to make the dish creamy, as the pig’s brain served that purpose.  That’s precisely the reason behind the title “Pork Sisig with Pig’s Brain”.  It may sound so hackneyed and uncreative, and worst, gross, but my brain cells are not ingenious enough to work on a more catchy titile, so let’s settle for that.

Pig’s ears  - 2 pieces
Half of a pig’s face
Pig’s brain – 1 pack (less than 100 g.)
White onion, finely chopped – 2 medium bulbs
Siling labuyo, chopped – as desired
Pickled green Chilis, chopped – as desired
Sisig Sauce:
Lemon Juice from 2 lemons
Kikoman soy sauce – 4 tbsp
Salt and Pepper to taste

Cooking Procedure:

1. Clean the pork well and make sure the hairs are thoroughly  removed.
2. Boil the pork face and ears in a pressure cooker for 7 minutes (start timing from the moment the pressure cooker whistles)
3. Put the pig’s brain in a plastic and put it in a boiling water.  Cook for less than 5 minutes.  Do not over cook. Scoop out and set aside.
4. Roast the pork until the skin is brown and crispy.
5. Chop the pork meat into very small pieces
6. Mix all the ingredients for the sisig sauce.
7. Mix together the sisig sauce, chopped pork, chopped white onions, chopped siling labuyo, and pickled green Chilis,. Add the cooked pig’s brain, and mix well.
Season with additional salt and ground pepper to taste.
