A Bowl of Black Chicken Soup Anyone?

This is Frederick’s Black Chicken Soup dish :-) he cooked for me a few months ago.

Frederick, my husband, is a food enthusiast who experiments on food/dishes most of the time.  He is not a conventional cook.  As I have said, he is a good cook who always makes do with whatever is available
in the kitchen.

During his vacation in November of last year, he experimented on Black chicken called silkie  which  is a breed of chicken named for its unique, fluffy plumage, which is said to feel like silk (source:  wikipedia).  Well,  I haven’t actually seen nor touched a silkie with it’s feather on.

I first encountered the black chicken  at the hawker place (food court) near our office. One day I decided to be more adventurous so I tried the black chicken soup.  The soup was not bad, it was actually delicious
and I liked it.  The meat is softer and tastier as compared to the regular chicken.  It reminds me of the native chicken back in the Philippines.  I thought at first that this is one of those cured food they put colors or dyes on. But as I bite deeper, the bones are also black.  The skin of the chicken is black, the bones are bluish to black, some are really really peach black, and the meat is light black or may be grey, somewhat.

Anyway,  Black chicken soup is believed to be nutritious.  Black chicken has centuries long history with the Chinese due to it’s nutritional and medicinal values. It is believed that black chicken has positive effect on the blood, lungs and stomach and the over-all well being of a person.   For example, I have learned that black chicken is used as a post-natal tonic.  Well, my sisters, after giving birth, are fed by our mother with her native-chicken soup, that’s back in my native town Tabuk.  Mama believes that the soup will hasten the recovery and bring back the strength of a mother who just gave birth.   Maybe black chicken soup works the same way for mothers.

Black chicken also has a naturally occurring antioxidant carnosine which is 2 times more potent as compared to the rest of its species.  (sources: and   I need to dig deeper and further about this.

Black chickens are widely available in all supermarkets and wet markets here in Singapore. With this soup dish, Frederick used the emperor chicken spice, a pre-packed Chinese herbs and spices which we bought from NTUC.  The herbs and spices blend that we bought is supposedly used as stuffings for roasted or steamed chicken.  Of course we are clueless as to what spices or ingredients we need to use for this dish so we have decided, Frederick decided, to use a pre-packed Chinese spices.

Anyway here's Frederick's black chicken soup - it was delicious :-)

Ingredients :

Black chicken – 1 whole, cut into pieces




Fish sauce

Salt and pepper to taste

Pechay (Bok Choy) - as many as desired

Sayote – sliced (as many as desired)


Emperor Chicken Spices (pre-packed) – ½ of the pack

The Emperor Chicken Spice has all or most of the following herbs and spices:
  • Ginseng or Codonopsis Pilosulae "Dang shen"
  • Huai Shan (Radix Dioscoreae Oppositae)
  • Dang Shen  (Codonopsis Pilosulae)
  • Yu Zhu (Solomon’s Seal Rhizome
  • Gou Qi  Zi (Wolfberries)
  • Hong Zao (Red Dates)
  • Chuan Gong (Szechwan Lovage Rhizome)
  • Tang Gui (Angelica Sinensis)
  • Bei Qi  (Astragalus Membranaceus

Cooking Procedure:

1)     Saute the garlice, onion and ginger then the chicken.

2)     Simmer for a few minutes

3)     Add ½ of the emperor chicken spice. Stir.

4)     Add the water and season with salt and pepper to taste.  Boil until the chicken is almost done and add the sayote.

This experimental recipe of my husband came out delicious.  I would want him to cook the same some other time most specially when I get pregnant and give birth :-)
