Ginisang Sardinas with Vinegar

Sardinas , canned sardines in the English.  For most Filipinos, any fish with tomato sauce and is canned is called sardinas.  It is a staple dish for those families who are lesser fortunate.

When I was young, I know that my parents are short of our budget for the month, when we start having sardinas on the table for lunch or supper, and most of the time, for the whole day.

My parents including me and my siblings have developed our own recipes for sardinas.  This is one of our favorite – our papas specialty.


Sardinas in tomato sauce (brands like 555, ligo, mackerel, etc.) – 1 can

Onion, sliced – 1 medium bulb

Garlic, crushed – 3 cloves

Vinegar – 1 to 2 tbsp

Sugar – to taste

Salt – less than ½ tsp

Freshly Ground black pepper.

Oil – 1 tbsp

Cooking Procedure:

1. Sauté garlic and onion in oil.

2.  Add the sardinas and the rest of the ingredients.  Stir.

3.  Let it simmer for a few minutes.

Serve with hot steaming rice and banana.  Love it.
